13
Q

How does modified atmosphere packaging work?

A

It’s performed by gas flush. Air is removed and replaced by a controlled mixture of gases.

Have greater flexibility
Light in weight provide a gas barrier
can be sealed easily
can be printed on

16
Q

Why is thermoplastic polymers used?

A

Are resistant to physical pressures of manufacturing ,distributing and retailing

have good aesthetic properties
can be multi layered with other materials to enhance overall properties

17
Q

Why is vacuum packaging good

A

Many spoilage microorganisms are aerobic, meaning that they grow as in the environment with oxygen removing much of the air with within packaging can therefore limit the growth of these organisms

18
Q

What does vacuum packaging prevent?

A

It prevents aromatic compounds in the feed product from evaporating of allowing the product to maintain sense and flavours in my otherwise lose .

19
Q

What is vacuum packaging combined with?

A

Other preservation methods in order to limit a group example, maintaining cold temperatures

20
Q

Vacuum packaging at home

A

The food should be eaten within 10 days. The packet should be sealed or left in the fridge until it’s eaten to keep it safe. Once the packaging is open it should still be kept in the fridge like other chilled foods and eaten within two days.

21
Q

What’s an example of an ambient food product

A

Canned and aseptically package foods so ready meals, and fruit juices

22
Q

Where are ambient food products, stored and sold

A

Stored and sold at room temperature

23
Q

And ambient foods what are the two main heat processes used?

A

Pasteurisation and sterilisation

24
Q

What ambient foods are not, heat treated

A

Cereal

25
Q

Ambient food products undergo rigourous heat treatment, so what organisms survive

A

Only humus microorganism survive

26
Q

What is the rigourous heat treatment known as

A

Botulinum cook

27
Q

What ambient food products should be stored carefully

A

Rice, cereal and pulses

28
Q

Why do some ambient feed products need to be stored carefully?

A

The moisture content for each needs to be uploaded to prevent mould and yeast spoilage
