Blue Agave, which in Latin is ‘Agave tequiliana Weber var. azul’
It is permitted due to its high inulin concentration, low fibre and chemical compounds that result in desirable flavours.

A
They are normally larger, slower maturing and higher in inulin.
Tequila made from highland agave have a fruitier aroma of green mango & Poire William.
