What is it meant by food-grade materials?
Suitable for intended use, such as containing hot food, for freezing or is microwave-safe
What is it meant by clean and in good condition?
Not cracked or damaged so that food is not exposed to contamination; and have never been used to store non-food items such as chemicals
What should you do when using styrofoam or plastic containers
Cool down hot, oily food slightly before placing them in contact with styrofoam or plastic containers
When using microwave ovens, ensure that the food container/packaging is microwave-safe
What are the types of food and the appropriate temperatures to store them at?
- Frozen (in freezer) at -18 C and lower
- Chilled (in chiller) between 0-4C
- Thawed frozen or defrosted (in chiller) between 0-4C
- Dairy (in chiller) 7C and below
What is internal food cooking temperature?
Internal food temperature must be at least 75C
What temperature should hot food be kept at?
Above 60C
What temperature should cold food be kept at?
Less than 5C
What is the danger zone temperature?
Between 5-60C
