A
Potable water = water safe for human consumption
Potable water should be obtained from tapa located in food preparation areas such as the kitchen

How do you prepare ingredients?
A
- Clean and wash ingredients
- Ensure ingredients are properly cleaned before use, wash thoroughly with clean water, scrub or peel ingredients, and rinse a second time
- Ensure washed ingredients are kept away from potential sources of contamination (e.g dishwashing liquid)
