Technology Used To Develop New Products Flashcards
Membrane technology
Food in fluid form is passed through a series of semi permeable membrane is similar to a superfine sieve. This results in a filtered fluid.
Examples include fruit juice, low-fat and products like milk, maple syrup
Ultrafiltration.
A process in which a liquid is passed over membranes, which have minute pause to prevent macronutrients such as proteins passing through
Examples include milk, apple juice
High pressure processing
A technological process that uses high pressure to destroy micro organisms and enzymes whilst retaining food quality as opposed to heat. Products are placed in a high-pressure chamber that is then filled with water to surround the products. A pump is used to increase the pressure of the water and this pressure is transmitted through the package
into the food its self for 2 to 3 minutes
Examples include apple sauce, fruit purée, guacamole
Microencapsulation
Small particles of a functional ingredient are contained and entrapped in a fine film of food grade material forming a minute capsule for the inclusion in food
Examples milk with iron, jellybeans, muesli bars, chewing gum
Nanotechnology
Manipulation of matter at the molecular scale to create material with new properties. Nanoscale food components added.
Examples include mayonnaise, table salt, low-fat products
