triglycerides and phospholipids
structure of a triglyceride
3 fatty acids and 1 glycerol molecule
formed by condensation, 3 ester bonds per triglyceride
for one triglyceride to form 3 water molecules are released
triglyceride structure and function
long hydrocarbon tail of fatty acids SO they contain lots of energy
insoluble SO don’t affect the water potential of cells
how do triglycerides clump together?
fatty acid tails are hydrophobic so face inwards shielding themselves from water using the hydrophilic glycerol heads
structure of a phospholipid
2 fatty acids, 1 glycerol, 1 phosphate group
2 ester bonds, 1 phosphodiester bond
phospholipid structure and function
make up the bilayer of cell membranes
hydrophobic tails and hydrophilic heads SO form a bilayer with heads facing out towards water on both sides
centre of bilayer is hydrophobic SO contains water soluble substances well
