- Placed atop a crisp wonton chip
- Layered with pickled red onions, fresh avocado slices and finely sliced scallions

Clear Lobster Roll:
ura fried Slipper lobster, spicy mayo, cilantro, mango, avocado, red leaf lettuce and masago

• Drizzled with curry oil
• Finished with carrot curls and black sesame seeds

• Presented as a pyramid with an onion based Lobster sauce
Veggie Roll:
- Tempura fried asparagus, spicy mayonnaise, cucumber, yamagobo, avocado, red leaf lettuce, spicy mayo, and white and black sesame seeds
- Rolled with sushi rice in a sesame seed soy paper
- Roll is sliced into 8 pieces
- Presented layered slightly on top of one another over a zig zag of Vegetarian Spicy Mayonnaise

- Black Tiger Shrimp, cream cheese and avocado
- Rolled with sushi rice in a nori seaweed wrap
- Whole roll is tempura fried
- Drizzled with eel sauce
- Finished with black sesame seeds

Jalepeno Tuna Sashimi:
- 9 Thinly sliced pieces of raw sashimi grade Hawaiian ahi tuna
- Each topped with a jalapeño slice
- Drizzled with fresh squeezed key lime juice and tostada sauce
Hamachi with Crispy Onions:
- 9 Thinly sliced pieces of raw Yellowtail
- Fried Mexican Green Onions are placed in the center of the bowl
- Drizzled with Ponzu truffle oil
- Finished with a pinch of truffle salt
- Presented in a large bowl
Seared Albacore with Black Truffles:
albacore rolled in olive oil, sprinkled with sea salt and seared with a blow torch
• 9 Thinly sliced pieces each topped with fresh shaved black truffle peelings
• Drizzled with ponzu truffle oil
• Finished with crushed fried garlic and a pinch of truffle salt
