  3. Draw cork
  4. Final clean
  5. Pour sample
  6. Remove the top of the capsule, by cutting around it below the lip of the bottle.
  7. Wipe the neck of the bottle with a clean cloth.
  8. Draw the cork as gently and cleanly as possible using corkscrew.
  9. Give the neck of the bottle a final clean inside and out.
  10. Pour a sample into a glass to check the wine’s condition.

1. Remove the bottle horizontally from its rack
2. Make sure the deposit is not agitated (Place in a decanting basket OR hold the bottle carefully)

3. Very gently remove the top of the capsule
4. Clean the shoulder and neck of the bottle
5. Very gently remove the cork

6. Be careful not to disturb the deposit
7. Holding the bottle in front of a light
8. Pour the wine carefully into the decanter until the deposit can be seen near the neck
9. At this point stop pouring

  1. Remove foil
  2. Loosen wire cage
  3. Hold cork after
  4. 30 angle bottle (gripping cork)
  5. Use other hand to grip the bottle base
  6. Turn the bottle not the cork
  7. Hold cork steady, ease it out slowly
  8. Remove the foil and loosen the wire cage
  9. The cork must be held securely in place from the moment the wire cage is loosened
  10. Tilt the bottle at an angle of about 30 degree, gripping the cork, and use the other hand to grip the base of the bottle
  11. Turn the bottle, not the neck
  12. Hold the cork steady, resisting its tendency to fly out and ease it slowly out of the bottle
  13. The gas pressure should be release with a quiet “phut”, not an explosion and flying cork.

The simplest way:

  1. Replace the closure
  2. Store the wine in a fridge

Vacuum system:

  1. Oxygen is removed from the bottle

  1. Blanketing the wine with a gas heavier than oxygen
  2. To form a protective layer between the wine and air
