What is a stock?
A liquid in which meat or fish bones and/or vegetables have been simmering for a long time
What is a soup?
A liquid made from stock
What are the characteristics of a good soup?
Well-flavoured
Well-seasoned
Correct consistency
Piping hot (apart from gazpacho, a chilled soup)
Give an example of a clear soup?
A broth- a clear soup with finely chopped veggies
What are purées?
A soup which is thickened by liquidising the ingredients
What is a liaison?
A liquid that thickens a soup
E.g. Starch
Roux-flour and fat
Whole cereals- sago rice.
What are the 3 convenience soups-
Canned
Dried
Chilled
What is a sauce?
A well-flavoured liquid
What are the 4 types of sauces?
Roux
Custard
Fruit
Cold
What is a Roux sauce?
Equal amounts of flour and fat
