How do raising agents work?
Raising agents make a gas and when gas is heated it expands
What is the natural raising agent?
Air-sieve flour, rub fat, cream sugar, whisk eggs to create air
Used in sponges
What is chemical raising agent?
Baking powder, bread soda
Baking powder contains acid and Alkai-when moistened a gas is produced CO2
Bread soda is an alkai so must be mixed with an acid and a liquid to make gas
ACID+ALKAI+LIQUID=CO2
What are 3 raising agents?
Natural
Biological
Chemical
What is a biological raising agent?
Yeast is a living organism-produces gas
Heat kills yeast but gas rises the baking
How to check if it is cooked?
Bread- hollow sound when tapped
Sponge-surface springs back, pressed
Cakes- skewer remains dry
What are the methods of making cakes?
Rub-in Creaming All-in-one Whisking Melting
What is pastry?
Mix of flour, fat and water
Types of pastry:
Shortcrust Puff Filo Choux Suet Flaky
Tips on making pastry:
Raising agent-air (sieving flour, rubbing in fat and rolling)
Water should be cold, mixing after each amount
