Muddled Shiso-Yuzu

Simple syrup, Yuzu juice, shiso (red, green, whatever we have in house), soda water, ice

Combine simple syrup (1 part sugar to 1 part water brought up to heat then cooled) and yuzu juice to taste. Muddle 2 leaves of shiso over a bit of ice until well ground, add 1 ounce of syrup, fill with ice and finish with seltzer water.
