As a soil how is Albariza?
Its the best of 3
Mainly Chalk and is very white, this soil absorbs and holds most of the moisture and reflects the sun and protects the soil under from drying
As a soil how is Arenas?
This soil is Sandy with some clay and limestone and chalk
As a soil how is Barros?
This soil is more fertail, contains more clay and decomposed organic mater and some chalk

They are classified as Superior

What they do with grapes before pressing?
Often they dry th egrapes by sun on Esparto Grass Mats in clear plastic tunels until they reach semi-raisin state.
This proces name is Soleo
It takes around 2-3 weeks
Name the 3 sections of pressing?
- Primera Yema ( this is a first pressing or free-run juice (best quality ))
- Segunda Yema ( this is second section )
- Mosto Prensas ( this is third section and its used for unclassified wine or distilation )
Today douring pressing we are adding tartaric acids but traditionaly what was added?
Yeso this makes wine drier and more acidic and assist clarification

Explain how the Flor works?
Flor forms veil ( Velo de FLor ) it prevents air from getting to wine and oxidise it.
Flor lives on nutrients and alc. and gives caracteristic smell and flavour to the wine

Very dry but slightly less then Manzanilla

This is traditionaly dry wine with amber color from cask maturation 7 or 8 years
Its matures under flor until fortification then continious maturation under traditional oxidative ageing
Explain Palo Cortado?
This is a rare wine
This wine have flor originaly but it dies early then continious maturation traditionaly

Dry or off-dry with some sweetnening added before bottling
