Empty cup on table with handle at 4 o’clock position
Cold beverage service
Every one in a fresh glass excluding water
Iced tea
Only refilled with a pitcher during LUNCH in a black linen
Cocktail service
Hold glass from stem or bottom of glass
What do you offer with salads?
Fresh cracked pepper
Split salads (3Steps)
Present full salad. Use French service to split. Present split salads
Plates for children
Offer a cold plate for those who are going to share
Serving and clearing
Serve from the left with left hand, clear from the right with right hand
Between each course
Clear soiled plates and any items not needed. Crumb the table
Mis en place
Silverware on napkin-lined plate prior to delivery of next course

Guest leaves table during meal (napkin service)
Remove napkin from chair and refold it
Beverages are expected to be delivered
Within 3 minutes after order is placed
