Blending in Rum

A

always blended
3 important technique;
1. some short age rums will be filtered with activated charcoal to remove color.
2. caramel color widely used. Dark rum get good proportional color from caramel not from oak
3. especially rum matured in oak, sweetened prior to release

White Rum

A

Could be had oak maturation but filter the colour. Aroma from light to pronounced, majority are light

Golden/Amber Rum

A

majority get the colour from oak maturation with caramel colouring for brand consistency. many have medium level of sweetness.

Dark Rum

A

split into two group :
1. made from oak matured golden rums that have long maturation, develop black banana, meaty, leather flavour of rancio and the colour depends to became brown

  1. majority dark brown colour, from caramel colouring. could be blend from aok aging but many unaged. could be detect by the aroma that lack of oak flavour

British style Rum

A

Heavy mark influence by British Navi

Jamaica ; high- ester rum, Fruity character, characterfull white rum

Guyana : very long aging in oak maturation, the palate are weight and mouthfeel.

Barbados ; not as pronounces as above have smoother and softer style

French style Rum

A

from two islands caribbean : Martinique & Guadeloupe = labelled as rhum agricole. only using sugar cane, short continues coloum still, have vegetal, cane juice character and pronounces ester.

white rum = most pronounces aroma
golden rum = must dried compare to Spanish style

Spanish Style Rum

A

Light to medium intensity with smooth character in the palate.

White rum - cuban style marks with higher abv, short-aged spirits to give softer, smoother mouthfeel. famous brand Bacardi

Golden rum - smooth texture on the palate, made by hug % of light mark and have vanila oak charater in the palate, with add sugar, medium aroma intensity

Rum Label

A

Aged statement are not clear
xo = Zacapa aged between 6 to 25 years

Rhum agricole = carribbean only from sugar cane produces only at Martinique 7 Guedeloupe

Cachaca = Brazil from cane juice

Overproof = rum with high abv to 57,15% aka 100 proof..
