Aromatised wines knows as
Vermouth
wine is flavoured with botanicals , alcohol is raised with additional of distillation, typically sweetened and can be coloured
Base wine for aromatised wine
no restriction on type of grape could be white or red.
usually made from white grape, high acidity and neutral to create dry based wine allow the botanicals to shine in the final product.
Majority red Vermouth are not using red wines but from white wines that have been coloured with caramel
Flavoured aromatised wine
no limit on the potential flavour can be use, they could use re distillation or maceration style and use certain artificial flavours
Distilled Aromatised wine
Distilled alcohol must be added between 14.5% to 22% abv. additional alcohol is commonly referred to “fortification”
Blending
take place at the end of the production process.
Dry base wine + distilled alcohol + the flavoured distillated & tinctures + Sugar & caramel colouring (if required)
Blend is store in stainless steel Vessel for a few weeks or oak barrels
