Pressing occurs after fermentation and draining. This is to increase skin contact between the juice and grapes leaching color, tanning and other phenolics from the skin.

Effects of pressing on Red
A
60-70% of free run juice occurs at the crushing phase. The balance 30-40% has a higher pH, lower titratable acidity, potentially higher volatile acidity and phenolics.
