What is wine?

What is needed in fermentation?
Yeast
What is yeast
An organism that lives in grapes, vineyard and winery. Yeast is “eating” the sugar found naturally in the grapes and converts it into alcohol and carbon dioxide
Type of Light Wines
8-15% alcohol and come from Bordeaux, Burgundy, Rioja, Chianti, Chardonnay, Shiraz
Sparkling Wines
Champagne (France), Cava (Spain), Prosecco (Italy)
Fortified Wines
15-22% alcohol, Sherry (Spain), Port (Portugal)
Red wine
Made from black grapes, fermented with the skin, giving a its color
White wine
Made from white grape, but also can be made from black grape with skins removed before fermentation
Rosé
Made from black grapes, but wine was in short contact with the skin
When does the fermentation stop?
15%
Yeast is dead once there is 15% alcohol or all the sugar is dead. The remaining sugar in the wine will determine the sweetness of the wine
Sweetness in Wine, Dry
Most sugar has been eaten up by the yeast and converted into alcohol and carbon dioxide.
Sweetness in wine, Medium
Winemaker removes the yeast before it eats up all the sugar. Or he adds not fermented sweet grape juice to dry wine.
Sweetness in wine, Sweet
Thicker and richer due to amount of sugar.
Made up from very rich in sugar grapes, the yeast dies before it eats up the sugar. The sweetness is balanced with acidity to prevent worms from cloying.
Light bodied wine
Refreshing and easy to drink, medium to low alcohol (reds have low tannins)
Medium bodied wine
Richer and more substantial due to grapes used or if wine was in oak barrels (gives extra texture to the wine)
