A

An organism that lives in grapes, vineyard and winery. Yeast is “eating” the sugar found naturally in the grapes and converts it into alcohol and carbon dioxide

When does the fermentation stop?

A

15%

Yeast is dead once there is 15% alcohol or all the sugar is dead. The remaining sugar in the wine will determine the sweetness of the wine

A

3 factors used in describing wine

A

Oak : fermented in mature oak, gained flavors, tannins and texture while in contact with the wood

Tannin : found in black grape skins, can be felt in teeth, gums and tongue making it feel dry. Gives complexity to the wine

Acidity : comes from grape juice, refreshing qualities to the wine, gives of mouth watering sensation. Too much acidity will make it tart
