nitrogen containing compound found in living things maintain and regulate life process
What are enzymes?
Proteins which act as a biological catalyst
What are proteins made of ?
amino acids
What are the 2 fonctional group present in amino acids?
NH2 :amino group
and
COOH: Carboxyl group
What is the name of the chemical reaction that makes proteins from adding amino acids together?
Condensation reaction
What is the functional group present in proteins?
Amide link
or
Peptide link
What happens when you cook/ heat proteins?
Heating proteins = intermolecular forces bonds are broken = protein can change shape = They are denaturing.
That can change the texture, ordor and taste of food.
What is an essential amino acid?
An amino acid that must be obtained from the diet because the body needs it but cannot produce it.
What is the name of the chemical reaction that breakdown proteins to its amino acid?
Hydrolysis
What could cause an enzyme to stop working?
Temperature or pH change.
Proteins have temperature and pH zone were they work at their best, if too hot = change of shape = enzyme stop working. Same for pH.
State the term used to describe amino acids that the body cannot make.
Essential amino acids
Are amino acids soluble or insoble in water? Polar or non polar molecules?
Amino acid are polar molecules, they contain an hydroxyl group, so will be able to form hydrogen bonding with water.
Amino acids are soluble in water.
State the term used to describe the change in shape of
enzyme molecules.
Denaturing
Suggest a change in conditions which would cause the
enzyme molecules to change shape.
Temperature increase / pH change
What van der Waals’ forces can proteins formed?
Hydrogen bonding with the -OH and -NH group present
Permanent dipole- permanent dipole with positive and negative side in the molecules
London dispersion forces (always present in molecules)
