What is the use of fat?
good source of energy transporting vitamins which one not soluble in water vital for institution and protection of organs

What are fats and oils made with?
alcohol (glycerol) = (propan-1,2,3-triol) and any carboxylic acid (called fattu acids)
Why are fats and oils known as tri-ester
They contains 3 ester links
Why do fats and oils more viscous and higher bp than other alcohols of similar size?
They contain 3 hydroxyl groups so they forms more hydrogen bonds between molecules
What are fatty acids?
Carboxylic acids that contains a large number of carbon atoms and react with glycerol to make fats/oils
What is the structure of fats?
Saturated (single bonds) and are solid
What is the structure of oils?
Unsaturated (double bond) and are liquids
Why are fats able to pack closely together?
No double bonds = allow strong LDF to hold fat molecules together
Why are oils not able to pack closely together?
Distorted structure caused by the double bond fewer LDF between molecules-less energy low BP than fats.
What happens to the BP as unsaturation number increases?
As unsaturation number increase = more distored stucture = fewer LDF = LOWER BP
What is the chemical test for unsaturation?
Decolourise bromine solution quickly
How many unsatuation does C44H79COOH has?
5 unsaturations (= 5 double bond)
