Explain hydrogen bonding (proteins)

- hydrogen bonding between the protein molecules makes shapes
- when proteins are heated (cooked) the heat energy breaks the hydrogen bonds which causes the protein chains to unfold. This changes the shape of the proteins and the process is called denaturing.
