Protein Flashcards
1
Q
What are proteins?
A
polymers made up of AAs
2
Q
What are AAs?
A
monomers that contain amino groups (have nitrogen)
3
Q
How do we measure crude protein?
A
use the Kjeldahl reaction to measure nitrogen
4
Q
What are the problems w/ how we measure protein?
A
- assumes that all proteins are 16% nitrogen
- not true all the time (it varies)
- says nothing about the AA content (measuring AA is expensive)
- not all nitrogen measured w/ Kjeldahl is from AAs or protein (non-protein nitrogen, contamination of feed)
5
Q
What do protein requirements change with?
A
age, reproductive status, etc.
6
Q
Why do animals require AA?
A
to synthesize proteins
(some AA can be synthesized by the animal)
