A

use the Kjeldahl reaction to measure nitrogen

What are the problems w/ how we measure protein?

A
  • assumes that all proteins are 16% nitrogen
  • not true all the time (it varies)
  • says nothing about the AA content (measuring AA is expensive)
  • not all nitrogen measured w/ Kjeldahl is from AAs or protein (non-protein nitrogen, contamination of feed)
