preserving foods Flashcards
we can preserve food by…
*use preservatives
*heating
*refrigerating
*pickling
*drying
*bottling
*canning
*salting
*fermenting
storing grain
stored in silos-made of concrete & metal(can use round containers at home/dry ice) to keep out oxygen/high temps/moisture, if we don’t store grain it would decay and make it unfit to eat
the indigenous way to store grains(Zulu way)
stored in a vase shaped hole in the ground, lined with clay and sealed with a large flat stone | when gathering it they would take the lid off hours before so theres actually oxygen to breathe in there
pickling (+ disadvantage)
*food fermented in brine(salt+water) then storing it in an acid solution(vinegar)
*it has a high acidity level so it destroys certain vitamins
drying
evaporating moisture from food using the sun | electric food dehydrators are used in the industry | grain dryers are used to dry seeds, barley, wheat and rice
methods of drying
*sun drying
*oven drying
*dehydration
*smoking
*air drying
salting
preserving food with dry edible salt because micro-organisms cant survive in salt (mainly meats;salted fish, salted meat)
what is food preservations
it is the proper handling, treating and storage of food so it doesn’t lose its nutritional value/quality/edibility because of spoilage
