What are the major differences between poultry and red meat inspection
Not every bird will be inspected
Official US suspect pen is not require
Temperatures aren’t taken
Humane slaughter not required
What is the scalder?
After bleeding the birds are carried through the scalder to submerge the carcass into hot water to loosen feathers for removal
Why do we rapid chill our poultry?
To inhibit bacterial growth-campy and salmonella
the bird must leave the chiller at under 40F at the thickest part
PM inspection of poultry will result in one of the 3:
Passed
unwholesome and condemned
anything questionable is retained for vet review
Avian tuberculosis, what do you see and what do you do with carcass?
Miliary nodules in the liver
one lesions is all it takes for condemnation
most likely the whole flock will be condemned–remember is zoonotic
If you see a tumor in the lymphoid, what are you suspecting?
Mareks (younger)
paralysis/paresis, tumors on skin and muscle
Leukosis (older)
visceral lesions
What do you do if you see mareks?
Condemnation
visibly affected birds are condemned for aesthetic reasons
What do you do about leukosis?
Condemnation even if you see one lesion
this is for aesthetic reasons bc there is no evidence that leuksosis is pathogenic to humans
Tumors?
One tumor-trim and pass
Multiple tumors-condemn
Septicemia?
if it has evidence of systemic involvement-condemn
Airsacculitis, how do you know if its chronic or acute?
Acute-water exudate
Chronic-white to cream colored
When would poultry be condemned with airsacculitis?
Airsacculitis is extensive
cannot be effectively removed
if it has systemic change
When would you condemn the whole carcass bc of synovitis?
It shows systemic involvement
Why would a cadaver be condemned?
incomplete bleed out bc dead birds hung on live area or
birds whose throat was not cut.
