Full ingredients: sauce of peeled and roasted eggplant, guajillo, garlic, cumin. Two cooked tortillas, dipped in sauce, filled with quesillo cheese, roasted squash, creamed poblanos, shallots, garlic, creme fraiche, sauteed squash blossoms.
In the style of enchiladas, this is roasted baby eggplants (with the skin removed) pressure cooked and then puréed into a sweet sauce. Tortilla coated in the eggplant sauce goes down on bottom of plate with baby squash, creamed poblanos and quesillo filling. Another tortilla tops with verdolaga (purslane) and panela sprinkled over the top.
Chile Relleno

Full ingredients: Poblano pepper, roasted, peeled, and seeded. Filled with yukon gold potato, braised kale, lemon, olive oil, and an onion cream sauce.

Traditionally a chile stuffed with cheese, dipped in egg and fried. Ours is not breaded and no cheese, so you don’t feel heavy and gross after eating. It is vegetarian but there is milk in the onion sauce. We take a roasted and peeled Poblano pepper and stuff it with boiled and smashed Yukon Gold potatoes, braised kale with lemon and an onion sauce (onion, flour, milk, spices).
Grouper

Full ingredients: Skin on grouper filet, pan roasted. Leeks, celery, onion, garlic, serrano, clams, heated in clam broth, cucumber juice, tomatillo juice, serrano juice, studded (stuffed?) with avocado puree.
Pipian
Listed ingredients: Turkey Leg, Plantain, Okra

Full ingredients: Turkey leg, pepian, pepitas, sesame seeds, peanuts, cinnamon, clove, black pepeprcorn, allspice, guajillo, turkey stock, banana. Finished w/ Corn, okra, chive, plantain.
“Pumpkin seed mole” made from pepitas, sesame, peanuts, chile, tomato, sugar, banana (for mouthfeel & sweetness) slow cooked to a reddish brown color. A slow cooked turkey leg is finished in the sauce for 5 to 10 minutes. There is okra in this dish, which is a little slimy, but they are whole and can be picked out.
Chicharron
Listed ingredients: Elephant Garlic Mojo, Bitter greens, Radish
Full ingredients: pork belly skin on, chile de arbol. Garlic mojo (blanched garlic, lime juice, roasting jus), bull’s blood, radish.
This is a pork belly steak “Porchetta” style. In an extensive preparation, the pork belly with the skin on is salted and spiced with chiles overnight, rolled and allowed to rest for another day. It is then put in a sous-vide bag and cooked very low for 36 hours until all of the fat and connective tissue have broken down. The entire piece is then fried, sliced and presented. The Mojo that covers the Chicharron is a blanched garlic sauce with oil, salt, and lime. There are also herbs (parsley, ?) and Bulls Blood (heirloom beet tops).
Cabeza
Listed ingredients: Lamb’s head, pickled onion, cabbage

It’s a full lamb’s head, chopped in half and served on-the-skull. Eyeball, brains, tongue, and head flesh are all edible on this dish, with the cabbage and pickled onion served in the eye socket.
