Other ingredients: Belle de Brillet (Bree-yay) is a Cognac blended with a bit of Pear Williams Liqueur, Lemon juice, fresh Ginger syrup, Green Juice Medley (Kale, Spinach, Parsley, Cucumber, Romaine, Apples, Lime)

Tepache Fizz

A

Main spirit(s): Tres Agaves Reposado Tequila (2oz) (comes from same distillery as Arette.)

Other ingredients: Bols Genever (Dutch-style gin made from malt wine, full-bodied), Lustau East Indian Cream Sherry, Lime, Tepache (details on separate card), nutmeg.

Ice: Shaken, served over rocks ice

Glass: In a mug

Garnish: Fresh nutmeg

Tepache (preparation / process)

A

Pineapple, piloncillo, and spices ferment cold-brew-style for 3 days. It’s then strained, left to sit for 3 more days. It’s then carbonated in a keg. That tapped beverage (Tepache) is the base for the Tepache Fizz.

Tepache is a traditional pineapple beverage that takes about 4 days to make properly resulting in a deeply rich and complex experience. Tepache is usually chilled at room temperature. Ours will be served with ice.

Main spirit(s): Evan Williams 100 proof Bourbon (2oz)

Other ingredients: Ancho Reyes liqueur (based on a 1927 recipe from Puebla, Mexico), Lemon juice, Tamarind syrup, Egg White, and BS bitters (mix of Fire Water (habanero, Mole bitters, and Angostura bitters)

Ice: Served neat

Glass: Sour glass

Main spirit(s): El Silencio Mezcal (1.5oz), Arette Blanco Tequila (1.5 oz)

Other ingredients: Mandarin Napoleon (orange liqueur made with 10-year-old Cognac), Lime, Jicama, Pineapple puree. Fresno Chili

Ice: rocks cubes??

Glass: Served in a Cazuela (earthen bowl)

Garnish: Grapefruit wedge, Lime wheel, Starfruit, Edible Marigold blossom

Price: $18

This dish is intended for 2 people, though is manageable for one thirsty person, and they can buy the pot for $20.

This cocktail is based on a traditional Guadalajara “Cazuela” punch the name refers to the earthen bowl its served in.

Main spirit(s): Chinaco Blanco Tequila (2oz, from Tamaulipas, Mexico’s east coast producing region, highlands-esque)

Other ingredients: Grapefruit cordial (concentrated syrup of fresh grapefruit and oils, Grapefruit soda, Acid Phosphate (like from a soda jerk, it reduces the bitter grapefruit without adding any specific flavor), sea salt (in, not on rim).

Other ingredients: Fernet Vallet (Mexican bitter herb liqueur similar to Fernet Blanco), Oro Blanco Cordial (from fresh Oro Blancos), Damiana (herbal, light, liqueur), Tea Pot Bitters (made in England by Dr. Adam Elmegirab, have layers of complex flavour with pronounced bitter black-tea backed up by rose, almond, vanilla, hazelnut, fennel, cardamom and subtle citrus peel, all leading to a long bitter-almond finish.).

Modern Times Lomaland Saison

A

Belgian Saison style from San Diego. Very crisp, fruity and dry.

Lomaland is an earthy, rustic Belgian-style farmhouse ale that’s both complex and quaffable. It smells like hay, pepper, and friendly sunshine. Its dry, cracker-like body and lightly-hoppy finish makes it a beautiful compliment to food. They named it Lomaland after the brilliantly crazy utopian community that was the first settlement built in Point Loma, the San Diego neighborhood where their fermentorium is located.

Mission Blond

A

Blonde ale from San Diego.

Kolsch-style ale with the color of a pilsner and the character of an ale. Endowed with an authentic Kolsch yeast strain for a peck of fruitiness that compliments the blend of noble hops. Lager-like with delicate dryness, reminiscent of ales from Koln, Germany.

Eagle Rock Populist IPA

A

From local brewer in Eagle Rock, it is hoppy, zippy and citrus.

Their take on the West Coast IPA; Populist is defined by bold hop character. Tropical fruit aromatics give way to flavors of orange blossom, pine, and freshly cut grass with each sip. Light caramel undertones and bready malt character establish the foundation from which the hops shine. Populist is an IPA huge in hop flavor and aroma without lingering or overpowering bitterness.

ABV: 7%

Bitterness: 71 IBU
