Leeks “Pappardelle”
Description: Roasted leeks cut into pappardelle strips served with fresh za’atar, sumac, and aged sheep’s gouda.

Pappardelle
A flat, wide pasta noodle shape similar to wide fettuccine
Sumac
A bright, red Middle Eastern spice made from dried sumac berries with a tart/tangy/sharp taste
Aged Gouda
Aged gouda cheese that has developed even more nuttiness, sweetness, and tang because of the aging process. Gouda is a creamy, yellow cow’s milk cheese that originated in The Netherlands with a caramel flavor and dense, springy texture.
Veal Sweet Bread
Description: Handmade pasta cooked with aromatic lemon chicken jus. Served with grilled sweet bread and asparagus.

Green Garlic
Aka Spring Garlic. Garlic that hasn’t grown properly and is pulled from the ground before it starts forming cloves. Has an enticing flavor and is prized for its flavor and texture. Heady, savory taste/aroma.
Jerusalem Artichoke Agnolotti
Description: Agnolotti stuffed with roasted Jerusalem Artichoke and marscapone. Served with spinach, jerusalem artichoke confit, and a green garlic/lemon/sage butter sauce

Agnolotti
Very similar to ravioli. A stuffed pasta from Piemonte. Different from ravioli in its shape because it is only one piece of pasta folded over vs ravioli, which is two squares stuck together
Jerusalem Artichoke
Aka sunroot, sunchoke, wild sunflower, etc. A root vegetable tuber that comes from a species of sunflower native to North America with an earthy, nutty taste similar to potato and water chestnut
Mascarpone
A soft Italian cream cheese made from a base a whole cream rather than milk with a mild and buttery flavor
Gnocchi al Gehaliam
Description: crispy and soft potato dumplings tossed over charcoal. Served with tomato seeds and green chili. Garnished with fried fava leaves and herbs.
