Short Rib
The short, front ribs taken from the cow’s rib/plate/brisket/chuck area with a short portion of rib bone encased in meat. Even fat distribution. A tender and flavorful cut.
Braising
A cooking method that involves a quick, high-heat sear then a low, gentle simmer in a layer of liquid. Braising maintains moisturize and emphasizes flavor.
Yemen Pancakes
A Yemenite/Jewish flatbread that resemebles a pancake. Buttery/flaky and pulls apart easily.

Part of the allium family similar to leeks and spring onion

Description: Lamb shoulder mixed with green chili, onion, and garlic. Served with laffa bread, sumac onions, and Meshwaya

Description: Chraime is a traditional Libyan dish based on fish and tomato sauce. Our spin on it involves rock shrimp, tahini, fresh herbs, and bread.
