What flour to use for pasta and why?
A
00 flour, it has high protein and is milled to a finer texture than most other flours

Basic method to make pasta
A
- Sift the flour onto a work surface and create a well
- Pour the liquid (egg and oil) in the well and gently stir, gradually drawing in the flour
- Continue until a firm dough is formed
- Turn the dough onto a clean area of work surface and knead until homogenous
- Rest well before shaping
