rest of the ingredients into a tin Mint and shake vigorously. Double strain through a mesh strainer, top with soda, garnish with mint

Combine in a mixing glass and stir with ice until well chilled use a julep strainer to strain into chilled coupe or glass with rocks depending on guest’s preference.
Dry - .25 vermouth with the 2.25 base spirit remaining the same
Xtra Dry - no vermouth with the 2.25 base spirit remaining the same

Lightly muddle mint in DOF. Add simple.Add ice. Top with bourbon. Stir and pull up to bring the mint flavor up into the whiskey

2 oz. pisco .5 oz. simple syrup .5 oz. lemon juice, fresh-squeezed .5 oz fresh egg white (pasteurized if you like) 2 dashes Angostura bitters
In a shaker, combine pisco, simple syrup, lemon juice and egg white and shake vigorously with ice. Strain into a glass and dash with bitters.

Muddle sugar cube, with bitters and a tiny splash of water til dissolved. Add whiskey and stir. Strain into chilled expressed lemon peel absinthe rinsed glass. Garnish with expressed lemon peel
