Antinutrient
natural or synthetic compounds that interfere with nutrient absorbtion
Antinutrient: Phytic acid
forms insoluble complexes with metal ions ca, zinc, iron and copper. Results in precipitation, making minerals unavailable to absorb in the intestines. Found in the hulls of nuts, seeds and grains
Antinutrients: Some proteins
Trypsin inhibitors and lectins in legumes. Interfere with digestion
Antinutrients: Flavanoids
Group of polyphenolic compounds including tannins. Chelate metal ions such as irons and zinc and reduce their absorption and also inhibit digestive enzymes and may precipitate proteins
Antinutrient: Excessive intake of required.
Excessive intake of fibre can reduce the transit time through the intestines to such a degree that other nutrients cant be absorbed.
Ca, iron, zing and mg share the same transporter in the intestines so excessive consumption of on can lead to saturation in the transport system and reduce the absorption of others
Sulphites
