How is Mousseux typically made?
Many producers are still winemakers and will send their sparkling wines to a specialist producer for the secondary fermentation. They do not have the equipment or expertise to do it themselves
The wine is returned to them for bottling and sale
Why is making sparkling in Saumur and Vouvray an attractive option for growers?
Less risk as grapes can be picked earlier with lower ripeness reducing risk of early autumn rain or fungal disease
Permitted yields are higher than for still wines - can make more money
