What is the role of fat in the body?
- Insulation

What does hydrogenation do?
- Transforms oil: Liquid–>Solid
- Improve shelf life
How does hydrogenation occur?
Veg oil + H2 + Heat and Pressure -> trans bonds
Where can you find TFA’s?
- Minority: Diary products
- Majority: Shortening
What is digestion?
Enzymatic breakdown of food components to smallest absorbable unit
What is metabolism?
Various pathways nutrients take after digest/absop
What are bile acids required for and made of?
- Made of cholesterol
- Required for emulsification of fat and formation of micelles
What is the purpose of Lipoproteins?
Transport fat in blood and lymph
What are chylomicrons?
Carry f.a. from GT->lymph->blood->adipose tissue
What are Very Low Density Lipoproteins?
Made in the liver to carry fat formed in the liver out to adipose. Becomes LDL
What are Low Density Lipoproteins?
Cholesterol rich. They deliver cholesterol to all body tissue.
