Warm water and detergent
Friction to remove debris
Utensil hot water rinse temperature 43 C
Sanitizing methods for surfaces 2 ways
- at least 77 C
- at least 24C water with chemicals
Acceptable chemical mixes
100 ppm Chlorine. 2 ml bleach to L water
200 ppm Ammonia
“quats”
probably need to rinse after as well
25 ppm Iodine
Clean in place equipment
wash, sanitize all interior surfaces
must drain and dry completely
Check concentration of Clean in place sanitizer at least every 2 hours.
