What does ordering a drink “tall” mean?
Build in an extra large highball or collins glass and increase mix.
What does ordering a “double” mean?
Double the amount of liquor, but use the same amount of mix. May need to increase the size of the glass.
What is simple syrup?
A clear, flavorless syrup used to sweeten drinks.
How do you make simple syrup?
1-1/2 c. Sugar
1 c. Water
What can you use to substitute for simple syrup?
A sugar packet.

Can you order other liquors in a Highball?
Yes. Any liquor can be used (e.g. Vodka Highball, Gin Highball, etc…). Make the same as the Highballl.
Scotch & Soda

Cuba Libre
Rum and Coke with a lime.
Make the same as a Rum and Coke. Squeeze a lime wedge into the completed drink (using one hand to shield the lime from the customer). Discard that lime and garnish with a different lime wedge.

Old Fashioned with Brandy instead of Bourbon.
