Types of tacos
- Al pastor: pork marinated in annatto and pineapple on a vertical spit rotisserie
- Barbacoa: slow roasted meat, either lamb, sheep, or goat
- Carnitas: slow roasted pork (aka “little meats”)
- Cochinita pibil: suckling pig slow roasted in achiote chili paste and orange
- Suadero: beef meat between the cow leg and belly
- Birria: slow roasted goat (or beef) served with consomme
- Arrachera: beef flank, usually the most expensive taco on the menu
- Guisado: stew - breakfast taco served with many possible fillings
- Campechano: means two fillings, usually bistec and chorizo
- Nopales: edible part of the cactus
Mexican breakfasts
- Chilaquiles: fried corn tortillas are smothered in sauce, sprinkled with cheese and a dollop of cream, and then topped with some finely sliced onion and parsley
- Huevos rancheros: fried eggs served on top of a lightly fried tortilla and smothered in a sometimes-spicy tomato sauce
- Huevos motuleños: tortilla that is lightly fried, then topped with a spoonful of refried beans, a fried egg, a tomato-based sauce, peas, ham and fried plantains
- Huevos divorciados: fried eggs and tortillas, served with salsa verde and roja
- Huevos a la Mexicana: scrambled eggs cooked with onion, tomato, and chile peppers

- Enchiladas suizas: lightly fried tortillas stuffed with chicken, covered in a green tomatillo sauce that usually also has cream in it, and coated with shaved cheese
