Describe the estufagem process
Wine is put in a large tank that has a metal coil running through it. Hot water passes through the coil to heat the Madeira to about 45-50C (113-122F), this happens for 3 months, allowing the sugars to caramelize, after which the wine rests before being transferred into cask
