Distilling of Zivaniya is a tradition of Lurucina and has dated back to mideval ages around 1191 to 1489 under the rule of the Lusignains who were part of the Roman catholic French kingdom

In 1489 Venetians took over from Caterina Cornaro chasing the Frenchman and native Cypriots inland where they set up their villages and lifestyles, including agricultural practices which are practised today in Lurucina

Harvest happens end of August when the sugar levels are very high which is best found in Lurucina
How is the Zivaniya made?
After harvest grapes are crushed and placed into plastic drums for 10 days to begin fermentation then the pomace is poured into copper tanks for distillation which separates the alcohol from water and other compounds after distillation the alcohol is cut to achieve desired alcohol content then aged for 7 months to 1 year before bottling and packaging
