- sweet: noble rot > apricot, citrus peel
- sparkling: barely ripe grapes
- often residual sugar
- sometimes aged in oak
- ageworthy (honey, toast, hay)
- different ripeness levels within one bunch > green, herbaceous aromas if underripe not removed > several passes
