Superior quality wine with specific attributes:

- Need to reach a certain alcohol content (determined in every region)

Wine made from grapes picked at normal harvest time
(Dry/off-dry with low alcohol content)
Spätlese Meaning
Meaning “late harvest” - riper grapes at a latter stage
(high sugar content but winemaker may decide to fully ferment to create a dry wine (Trocken))
Auslese Meaning
“Select Harvest” - Hand selected, very ripe grapes
Beerenauslese
“Berry select harvest” - grapes are individually selected, overripe berries usually infected by noble rot
very rare
Trockenbeerenauslese
“dry berry select harvest” - extreme longevity - very rare and treasured wines. Individually picked grapes that are overripe and dried (raisin like) and infected by noble rot
Eiswein
“ice wine” - grapes usually as ripe as Beerenauslese that have frozen on the vine - pressed whilst frozen. Making a very sirupy wine
