2.5 oz. Peanut Butter Washed Bourbon

.75 oz. Banana Maple Cordial

4 Dashes Angostura

GLASS: Etched Rocks Glass
GARNISH: Orange Peel and Toasted Pecan
ICE: Penny Pound Cube

Add ingredients to a mixing glass, add ice and stir. Strain over a penny pound cube into an etched rocks glass. Garnish with an orange twist and toasted pecan.

ETC: Round fatty mouth feel, with peanut butter nose. Elvis/Paul Simon reference

A

1.5 oz. Rutte Celery Gin (Dutch Gin)

.75 oz. Lemon Juice

.5 oz. Salers Gentian (French aperitif wh.wine, tonic/gentian)

.5 oz. Demarara Syrup

1 Sleeve Celery Seed Tincture (151 steep, burn, aromatics)

Club Soda

GLASS: Etched Highball
GARNISH: Celery Stalk with leaves, sprayed with Celery Seed Atomizer
ICE: Cubes

Add all ingredients (except club soda) to a mixing tin, and ice and shake. Open and add 1 oz. club soda, then strain over cubes in a highball. Top with club soda, then garnish with celery stalk, then spray with atomizer.

ETC: Billy Rose/Frank Sinatra Song.
Our version of a Gin and Tonic/Tom Collins.

A

1.5 oz. Iwai Japanese Whisky (American/Japan mix)

1 oz. Grapefruit Cinnamon Cordial (AKA Don’s Mix)

.5 oz. Swedish Punsch (Swedish rum, sweet/acidic)

.25 oz. Douglas Fir Eau de Vie (grape dist., clean, menthol)

2 Sleeves Bergamot Tincture (high proof earl grey tea)

1 Lemon Wedge

GLASS: Tea Cup
GARNISH: Rosemary Sprig, Dehydrated Lemon Wheel Float, Stone Pine Spray

Add all ingredients to a mixing tin, add ice, shake, and double strain into a tea cup. Garnish with rosemary sprig, dehydrated lemon wheel, and stone pine spray.

1 oz. JM Rhum Agricole 100

1 oz. Kappa Pisco (Chilean)

.75 oz. Lime Juice

.5 oz. Snap Pea Syrup

.25 oz. Honey

1 Bar Spoon Yogurt

5 Mint Leaves

GLASS: Sour Glass
GARNISH: None
ICE: None

Add all ingredients to a mixing tin, add ice and shake. Double strain into a Sour Glass.

ETC: Mix between Daquiri and Pisco Sour, without egg

1.5 oz. Absolute Elyx (100% winter wheat)

.5 oz. St. George Spiced Pear (eau-de-vie with cloves, etc)

.5 oz. Drambuie (scotch based, inf. w/ honey, botanitcals)

.25 oz. La Quintinye Sweet Vermouth (lite, w menth + euc)

1 Sleeve Walnut (Nocino) -green walnut liquor

GLASS: Nick and Nora
GARNISH: Speared Pear Fan
ICE: None

Add all ingredients to a mixing glass, add ice and stir. Strain into a chilled Nick and Nora. Garnish with a speared pear fan on edge of glass.

A

2 oz. Carrot Infused Aviation Gin

.75 oz. Blood Orange Juice

.75 oz. Apple-Ginger Syrup (2/3 apples)

2 Dashes Peychaud’s Bitters

1 Egg White

Top With Club Soda

GLASS: Short Highball
GARNISH: Julienned Carrots
ICE: None

Add all ingredients (except club soda) to a mixing tin, cap and dry shake. Open and add ice and shake vigorously. Strain into a short highball. Allow to briefly settle, then add club soda to shaker tin. Slowly pour soda into highball to create a crown. Garnish with carrots and a straw.

New Ingredient Recipes

PEANUT BUTTER WASHED BOURBON
1 L Evan Williams Black Label Bourbon
250 ml Peanut Butter
Blend in a vitamix and allow to infuse for 12-24 hours. Pour through increasing levels of fine straining, starting with superbag, and then onto coffee filters until clear.

BANANA MAPLE CORDIAL
16 oz. Giffard Banana Liqueur
16 oz. Maple Syrup
Combine in a non-reactive container. Cap, label and date.

CELERY SEED TINCTURE
8 oz. Celery Seed
16 oz. Boyd & Blair 151 Vodka
Combine in non-reactive container. Cap, label and date.

BERGAMOT TINCTURE
2 Earl Grey Creme tea bags
16 oz. Boyd & Blair 151 Vodka
Combine in a non-reactive container. Cap, label and date.

APPLE-GINGER SYRUP
2 part Apple (diced)
1 part Ginger (diced)
3 part Sugar
3 part Water
Combine in a vitamix and blend, then run through fine strainer to remove pulp. Cap, label and date.
