The grapes are picked up early when they are still high in acidity and dried indoors, concentrating sugars and flavours.
fermenting starts in winter months
29 How is Valpolicella Ripasso made?

The Amarone skins continue ferment and increase the colour, flavour and tannins to the wine.

60 VSP training is quite common in northern Italy, but Pergola trellising can be found there.
What is Pergola trellising and what are its advantages?
The vine canopy is trained high with the fruit hanging down below a horizontal canopy of leaves.
This protect the grapes from sunburn, allowing air to circulate, minimising the risk of rot.
It is used for wines require H acidity and L sugar levels, eg. sparkling wine grapes; wines need to be free from damage and disease, eg. wines made from dried grapes
