What are differences between Valpolicella classico doc and Valpolicella ripasso doc?
A
Ripasso method is used In valpolicello ripasso doc which gives extra tannin, colour and body to the wine.
In ripasso method unpressed Amarone wine grapes are used and put into a vat of Valpolicello wine with yeast which ferments the remainning sugars in amarone grapes.
Valpolicello classico is light-bodied, fruity with res cherry flavours
Valpolicello ripasso is med to full body, med to high tannin with stewed red cherry and plum.
