1. Draw the outer outline then the inner outline.
2. Select the inner outline.
3. Shift click the outer outline to select both.
4. Choose Object > Compound Mask > Make.

2. Type > Create Outlines.
3. Object > Ungroup
4. Use the anchor points to change text.
