Dehydrate Fruit

A
  1. Check par levels - there should be one large container and one quart container full of dehydrated fruit
  2. Check the fruit in the walk-in. What is there an abundance of? Will those be needed later in the week?
  3. Wash the produce. Run the cutting board and knife in the dishwasher before use. Slice off the ends of the fruit and discard. Cut the fruit into thin slices.
  4. The dehydrator is located downstairs in the kitchen - top shelf, above the fryers. Remove the trays. Arrange the freshly sliced fruit on the trays (can overlap).
  5. Fill all of the trays with fruit
  6. Hit the start/stop button. Hit the time/temp button. Use the +/- buttons to change the time and temperature. Start with 15-17 hours for time. Press the time/temp button again to change the temperature to 158. Press the start/stop button again.
  7. Dehydrating fruit is a two-day process. Check the fruit the next day and add 8-10 more hours at the same temperature. After two days, the fruit should be properly dehydrated.

Espresso Martini Batch

A
  1. Pour 3 bottles of well vodka into large pitcher. Wash the vodka bottles and set them aside. The completed batch will be poured back into the vodka bottles.
  2. Add 2.5 packets of coffee into the pitcher of vodka. Stir. Cover. Date. Store in the walk-in for 24 hours.
  3. After 24 hours, strain the batch into a new large pitcher. Put a coffee filter into a fine mesh strainer and strain.
  4. Discard the used coffee grounds.
  5. Grab one bottle of Averna and one bottle of Kahlua.
  6. Measure out the coffee vodka yield. Add 25% of Averna and 25% of Kahlua to the batch.
    - 11 cups of vodka = 2.75 cups of Averna and Kahlua (11 x .25 = 2.75)
  7. Stir and redistribute the batch into clean vodka bottles. Date. Store in the walk-in.

Juice Watermelon

A
  1. Wash the watermelon. Any residue from the melon will transfer to the knife back to the inside of the watermelon. Wipe dry.
  2. Carefully cut the watermelon in half to get two equal halves.
  3. Cut each watermelon in half again to get wedges.
    - If your watermelon is large, you may have to cut it 3+ times.
    - The smaller the pieces the easier it is to juice.
  4. Slice the watermelon flesh away from the rind. Cut into smaller pieces if needed.
  5. Juicer is located in the cage near the saved tequila bottles. Put watermelon chunks through the juicer.
  6. Use plastic pitcher to store. Label and date. Put in the walk-in.
  7. Clean up. Break down the juicer and wash.
  8. Wipe down the base of the juicer with a warm rag.

Spicy Tequila

A
  1. Add peppers to well tequila bottle (you may have to pour 2 oz of tequila out before adding peppers)
    * super spicy peppers (e.g. ghost) = 1 per bottle
    * Larry’s (aka Papa Lambros) peppers = 4-5 per bottle
    * Habanero peppers (can be found in the kitchen) = 4 -5 per bottle
  2. Recap bottle. Date. Store in walk-in to marinate.
    * Let marinate for at least 48 hours before using
    * Will get better (and spicier!) with time

Bloody Mary Mix

A

INGREDIENTS
* 1 pint of horseradish
* 1/3 bottle of Lee and Perrins Worcestershire sauce
* 4 tablespoons Cholula
* 2 tablespoons green Tabasco
* 3 tablespoons celery salt
* 1 tablespoon paprika
* 1 teaspoon cayenne pepper
* 2 tablespoons garlic powder
* 5 tablespoons black pepper
* 2 tablespoons steak rub
* 1 teaspoon cumin
* 1 tablespoon dry jerk seasoning
* 2 tablespoons soy sauce
* 3 tablespoons lime juice
* 3 tablespoons lemon juice

NEXT STEPS
* Mix all ingredients together (will make 1 quart)
* Divide yield in half
* Put in two separate plastic containers
* Label containers with date
* Freeze half - put in freezer with ice cream (exp. 6 months)
* Refrigerate half - put in cooler (exp. 1 month)

Pickle Brine

  • Coordinate with BOH to fill up quarts of pickle brine/juice
  • Use one quart to scoop pickle brine/juice into other quarts
  • Label each quart. Include the date!
  • One quart should be stored upstairs in the fridge
  • Remaining quarts are stored in the walk-in - FIFO!

Honey Ginger Simple Syrup

A

INGREDIENTS
* Honey (located in the kitchen)
* Hot water
* Organic Spicy Ginger Cocktail Syrup (located in the cage)

NEXT STEPS
* Use measuring cup to measure out 3 cups of honey, 3 cups of hot water, and 3 cups organic spicy ginger cocktail syrup
* Add to a pot and boil over stove
* Make sure all honey has dissolved
* Turn down heat and simmer for 20 minutes
* Taste and adjust as necessary
* Pour into empty quart containers
* Label and date bottles
* Put in walk-in - FIFO!
* Bring par to 2 quart containers
* Refill juice bottle as needed

* Hot water

NEXT STEPS
* Use measuring cup to measure out 3 cups honey and 3 cups hot water
* Add to a pot and boil over stove
* Make sure all honey has dissolved
* Turn down the heat and simmer for 20 minutes
* Taste and adjust as necessary
* Pour into empty quart containers
* Label and date bottles

* Refill High Life bottle as needed

Simple Syrup

A

INGREDIENTS
* 1 bag of sugar (4 lbs = 64 oz = 2 qts = 0.5 gal)
* Equal parts hot water

NEXT STEPS
* fill pitcher/cambro with equal parts sugar and hot water
* Make sure all sugar has dissolved
* Pour into empty El Jimador bottles (***1 bag of sugar will make approximately 3 bottles of simple syrup)
* Label and date bottles
* Put in walk-in - FIFO!
* Bring par to 9 bottles

Air Conditioning Systems & Dehumidifier

A

There are two AC systems:

  1. The house system - controlled by the thermostat
  2. The wall mounted unit above the chalkboard - controlled by the remote
    * the remote is located next to the thermostat
    * the front panel slides down
    * make sure to aim the remote directly at the machine

The wall mounted unit has 4 important settings:

  1. Cool (snowflake) - AC/default setting if the garage door window and doors are closed
  2. Dehumidifier (water droplet) - default overnight setting
    * if there is an abundance of condensation on the garage door window panels or water dripping from the HVAC system, the dehumidifier setting should be used
  3. Fan (fan) - default setting if the garage door window and doors are open
  4. Off (circle arrows) - how the machine spends much of the winter

PLEASE
* Make sure the garage door window and all the doors are closed if the AC is on
* Never sent the AC below 72 F
* Turn off all AC overnight
* Set the wall mounted unit to dehumidify overnight

Hue Lights

A

Keep the house iPad charged up because it is the only way to control the lights.

Continue to use the 5 button system near the bathroom.

From top to bottom:
1. GTFO lights up at close
2. Bright days
3. Early evening
4. Dark and seedy
5. Lights out

While still using the above, open the Hue app (NOT “Hue disco”) on the iPad.
* Click “floor”
* Click “day time lights”
* Dim the floor lights from here

Change the lights to “nite bar” after dark

Individual lights can be dimmed as well

Sometimes when you hit the 5 button system, the other lights bug out
* be ready to hit “day time lights” on the iPad

OPENING
*Hit either 3 or 4 on the system
* Go into the Hue app and turn on “day time lights”

CLOSING
* Go into the Hue app and turn all lights off
* Go to the 5 button system and hit the bottom button (5 - lights out)
