Sift flour into a bowl, make a well and pour in the beaten egg. Flick some flour over the egg
Melt butter and lard in water, then bring to a rapid boil
Pour the liquid over the flour and quickly distribute with a cutlery knife
Bring together to form a cohesive dough with no streaks of fat, chill in fridge
