- Verfiy establsihment implements its HACCP plan
- Must be familiar with plant HACCP and hazard plan
- Use recordkeeping and observations to ensure proper implementation of HACCP
- Document findings in PHIS
- If HACCP cannot be completed in one days, find steps to make sure this can be done
