1 oz gin
.75 oz campari
.75 oz house sweet vermouth
Build: build ingredients in rocks glass, stir with kd ice, and garnish with a fancy orange twist.
White Negroni
1 oz gin
.75 oz suze or salers apertif
3/8 oz dry vermouth (scant half ounce)
3/8 oz blanc vermouth
Build: build ingredients in rocks glass, stir with kd ice, and garnish with a long fancy grapefruit twist
Gimlet
2 oz gin
.75 oz lime juice
.5 oz simple syrup
1 lime wedge
Build: build ingredients in shaker tin (including lime wedge, squeezed in = regal shake) shake with kd ice, then fine-strain into nick and nora glass served up with a lime wheel.
Martini
2.5 oz gin (2.75 oz. if “extra dry”)
.5 oz dry vermouth (.25 oz if “extra dry”)
4 dashes of orange bitters
Build: build ingredients in mixing glass with kd ice and cracked ice, stir 30-35 rotations, then strain into nick and nora, then strain into nick and nora glass served up with lemon twist or 1 skewered castelvetrano olive.
Dirty Martini (Gin or Vodka)
2 oz gin or vodka
.75 oz castelvetrao olive brine (1 oz if “extra dirty”)
Build: gin build ingredients in mixing glass with kd ice and cracked ice, stir 30-35 rotations, then strain into nick and nora or coupe glass served up with 1 or 3 skewered olives. For vodka build ingredients in shaker tin, fully shake with kd ice for up to 12 seconds, then strain into nick and nora or coupe glass served up with same garnish.
Martinez
2 oz old Tom gin
.75 oz house sweet vermouth
Bar spoon luxardo maraschino
2 dashes angostura orange
Build: build ingredients in mixing glass with kd and cracked ice, stir 30-35 rotations, then strain into nick and nora glass served up with lemon twist.
Alaska
2 oz gin
.5 oz yellow chartreuse or strega
2 dashes angostura bitters

Aviation
1.5 oz gin
.75 oz lemon juice
.25 oz luxardo maraschino
.25 oz crime de violette
Build: build ingredients in shaker tin, shake with kd ice, then strain into nick and nora glass served up with cherry at the bottom.
Arsenic and Old Lace
1.75 oz gin .5 oz dry vermouth .25 oz creme de violette Barspoon absinthe 2 dashes angostura orange
Build: louche nick and nora glass with cold water and 3 dashes of absinthe, build ingredients in mixing glass with kd and cracked ice, stir 30-35 rotations, the strain into nick and nora glass served up with a lemon twist.
Bijou Cocktail
1.5 oz gin .75 oz house sweet vermouth .75 oz lemon juice .5 oz vanilla bean syrup .75 oz egg white
Build: build ingredients in shaker tin (egg white in first, or in separate tin) dry shake for 8-10 seconds, then shake with kd ice, double strain into nick and nora glass served up. Garnish with a fancy lemon twist.
