What is a green harvest

A

In the northern hemisphere, in august, for red grapes you can usually see a clear change from the unripe green grapes into the more purple color of the riper grapes and in this transition period you can usually see a clear difference between the main shoots(the first to spring) and the secondary shoots which tend to be much more unripe. The secondary crop(secondary shoots) is often removed in order to maximise the quality and flavour in the primary crop(primary grapes).

The crop reduction is usually in the order of 20-30% so that the grapes that are left can ripen fully.

Producers willing to do this extra work tend to be ones more focused and quality and can be used as an indicator to separate good from great producers.
