What does boiling fruit do?

A

Boiling fruit will release pectins that will cloud beer. Essential oils will become bitter during boiling. For these reasons, fruit should be added during fermentation or conditioning.

Whole fruit is added to the secondary where the alcohol can draw out the flavor and color without releasing undesirable pectins

A

Cherries and berries should be crushed slightly by hand to break the skin

Cherry pits

A

Cherry pits are essentially wood and impart tanins. Cherry pits should be added to with the fruit when a dry woody finish is desired. Cherry pits should not be crushed because they will contribute a harsh bitterness
