What is cold maceration?
Who was the most famous of the original practitioners?
Cold maceration is a matter of taking lightly crushed or whole grapes (usually a combination of the two), placing them in a refrigerated sealed vat, adding a sizable dose of sulfur to ward off bacteria, and then allowing the grape juice to macerate with the skins without fermenting (because it is too cold for fermentation to commence)
Henri Jayer would cold macerate his grapes 4-6 days before fermentation
